Healthy muffins

I am currently trying a dairy free diet as my skin is suffering;  I am isolating food groups to try and find the source of the issue. I have been experimenting with dairy alternatives and have found these simple dairy free muffins are easier than the real deal! Great for a pre-wedding diet, and a healthy snack on the go!

It sounds counter intuitive… healthy + muffins, but the diet version of the family favourites are yummy and guilt free. Made from a very simple recipe, you can add whatever you fancy to add flavour to these paleo and dairy free muffins.

 

Ingredients

2 x bananas

2 x eggs

2-3 x tbsp coconut flour or ground almonds

1 x tbsp desiccated coconut

drizzle of agave nectar

Optional extras: raspberries, nuts, chia seeds etc…

 

Method

Preheat the oven to 200°C (fan oven).

Mash the bananas in a mixing bowl.

Separate the egg whites from the yolks, adding the yolks to the mashed bananas, setting the whites aside in another bowl.

Add the coconut flour, desiccated coconut and agave nectar to the yolk and banana and mix.

In the separate bowl, whisk up the egg whites until stiff.

Fold the egg whites into the mixture carefully trying to keep as much air in as possible.

Add any optional extras.

Place in muffin cases and into the oven until golden on top/ cooked through.
